I LOVE my new hobby! I have been cooking like a maniac this week - and I am having a great time doing it. (And by cooking I mean all homemade cooking!) Casey hasn't minded one bit either!
So far I have cooked the following things: homemade chicken enchiladas (no, I didn't kill the chicken myself), beef stroganoff, homemade red velvet cake with homemade cream cheese icing, baked potato soup, fudgy fudge pie, and sesame chicken! All of it has been excellent but our favorite has been the baked potato soup! It is WONDERFUL!
We are going to start planning on me cooking 3 homemade meals a week, doubling each recipe, and putting the leftovers in the deep freeze. So far we have quite a few choices in the deep freeze for those nights I decide not to cook. For next week we have decided on parmesan chicken, vegetable soup, and pizza macaroni and cheese! (I know the pizza macaroni and cheese sounds bad, but it looks and sounds delicious!) We haven't decided on the homemade dessert yet, but I have no doubt we will find one!
I know you are all thinking that we are going to weigh 500 pounds by next year, but I do plan on modifying the recipes after I have cooked them once. I want to have a baseline of each meal, modify it the next time I make it, and compare the two. I do plan on getting and keeping us healthy, but I will enjoy the full-fat version the first time I make it all the same! I am glad I am starting (and loving) this new hobby! (On a side note - Clay tried all of the above and didn't care for any of it. I am not taking it personally because he drinks breast milk after all.)
I have LOVED being off with my family this week and will miss being together tremendously. It does make me appreciate every single minute with Casey. I love him more today than I ever have - my love for him grows with each passing day, each passing moment, and with each hurdle we overcome. (And I love that he is back in school - he is taking Calculus 2. Blah. He seems to be loving it! He showed me one "practice" problem and it gave me tremendous anxiety! Glad it's him and not me - I'm so glad he is working toward his dream!)
